Zesty Coleslaw makes the perfect side dish !

Crunchy, zesty, and delicious, coleslaw is the perfect side dish for any picnic or bbq. Full of heart-healthy cabbage, it’s a far better choice than macaroni salad or potato chips! Known for its cancer fighting ability, cabbage lowers LDL cholesterol, is a good source of fiber, and is high in vitamins C and K. It has also been shown to suppress inflammation and help detoxify the body.
Avoid the added sugar and hydrogenated oils found in many commercially made products and whip up a fresh batch of this zesty coleslaw made with a Greek yogurt dressing. It’s so quick and easy!
½ cup Greek yogurt
1 tbsp apple cider vinegar
2 tbsp honey
½ tsp salt
dash of pepper
¼ head red cabbage – shredded
¼ head green cabbage – shredded
3 carrots - grated
¼ cup pumpkin seeds
In a small food processor or bowl, mix yogurt, vinegar, honey, salt and pepper until well blended.
In a large bowl, combine cabbages, grated carrots and pumpkin seeds and coat with dressing.
Mix well and refrigerate for about half an hour before serving.
