Spinach - Good and Good FOR YOU !

Did you know that experts say eating salad is one of the most healthy eating habits you can adopt? It’s a super easy way to add a couple of servings of raw vegetables and fruit in to your diet and there are endless combinations of ingredients to keep things fresh and interesting. Although each type of leafy green has different health benefits, they are all full of fiber and low in calories. Add in an assortment of colourful fruits and veggies, healthy fats, and protein and you have a great meal or side dish you can feel good about eating.
2 tbsp honey
2 tbsp red wine vinegar
1 tbsp olive oil
1 tbsp mustard
¼ tsp salt
1 clove minced garlic
¼ cup diced red onion
10 oz chopped spinach
4 sliced hard boiled eggs
4 oz sliced mushrooms
½ sliced apple or orange
¼ cup chopped walnuts, pecans or almond slivers
2 tbsp grated asiago
- Place all dressing ingredients in a small food processor and blend well.
- In a large bowl pour the dressing over the spinach and mix until the dressing is evenly distributed.
- Add the eggs, mushrooms, apple and walnuts and toss lightly.
- Top with the grated asiago.
