Mandarin Walnut Salad!

Ingredients

 

Dressing:

½ cup Greek yogurt

20g (1/2 cup) fresh basil

1 tsp lemon juice

1 tsp balsamic vinegar

1 tsp honey

¼ tsp salt

dash pepper

 

Salad:

2 cups chopped kale

4 cups chopped baby spinach

¼ cup diced red onion

30g goat’s milk cheese - crumbled

1 mandarin orange – sliced into small pieces

½ cup toasted chopped walnuts (bake in a 350 oven for about 8 minutes)

 

 

 

 

DIRECTIONS

Place all dressing ingredients in a small food processor and blend well.

In a large bowl combine the kale and spinach, then add the dressing and mix to coat the leaves

Add the onion, goat cheese, orange and walnuts and toss lightly
