Detoxifying Chopped Chicken Salad

A great way to fill up on detoxifying foods is to combine them in a salad. I scoured the internet and came up with this great combination that is both delicious and satisfying. Make it as is or use it as a base to add your own favourite veggies: onions, peppers, beets, avocado, etc.
- ½ cup chopped walnuts
- 3 oz baby kale
- 10 brussels sprouts
- 8 oz broccoli
- 1 cup grated carrot
- 500g cooked and diced chicken breast (or sub in your favourite protein)
- 1/3 cup balsamic vinegar
- ¼ cup olive oil
- 3 tbsp honey
- 3 tsp chia seeds
- 4 tsp dijon mustard
- pinch of salt
- pinch of pepper
- Finely chop all salad ingredients and combine with the chicken in a large bowl.
- Combine dressing ingredients in a small food processor to blend or whisk by hand.
- Pour the dressing over the salad and mix well.
Makes 5 servings.
