Steel Cut Oats to Go!

Breakfast has got to be my favourite meal of the day. It’s a fresh start. A chance to begin again. The perfect “do-over”. The only hiccup in this magical food dream is trying to make something delicious and nutritious while packing lunches and encouraging 5 kids to get dressed and pretend they want to go to school…
So enter my 10 lb bag of steel cut oats. When I bought it 6 months ago I was excited! Full of fiber, oats are touted as helping decrease the risk of heart disease and diabetes while keeping you feeling fuller for longer. Except they take 30 minutes to cook. What??!! I didn’t have time for that! Well now I do. Here is a super fantastic, time-saving way to enjoy those steel cut oats and have a healthy breakfast ready to go on even the most crazy of mornings.
Ingredients:
2 cups steel cut oats
4 cups water
¼ tsp salt
Delicious additions:
Milk/Almond milk
Chopped nuts
Fresh chopped fruit or berries
Dried fruit
Unsweetened coconut
Chia seeds
Hemp hearts
Ground flax
In the evening, combine the oats, water, and salt in a large pot and bring to a boil. Lower the heat and simmer for about 3 minutes.
- Divide the oatmeal amongst 6 containers (mason jars are ideal) and let cool for about an hour before refrigerating.
- In the morning your oatmeal is ready to be reheated for 2 minutes and topped with your favourite additions. Enjoy at home or re-lid and take you oats to go!
