Cauliflower Crust Pizza

Recently my Facebook feed has been inundated with recipes claiming to be “low carb!” and “gluten free!”. The photos that accompany these posts immediately make my mouth start to water…gooey melting cheese…rich chocolate cake… I can’t resist clicking through to the recipe, my excitement at enjoying these previously forbidden delicacies growing by the moment. And then I read the ingredients. And then I investigate the nutritional profile (which usually isn’t mentioned…). And then I sigh. So many of these recipes are high in sugar and extremely calorie dense. While some contain “better” ingredients than their traditional counterparts, you still need to do your research and decide whether they are indeed a healthy alternative or maybe just a healthier treat.

The following delicious recipe is for a cauliflower crust pizza. Yes, it is low carb! and gluten free! It is also low in sugar and calories and a great base for you to pile on your favourite veggies.

Ingredients:

2 ½ cups grated cauliflower

100g part skim mozzarella

100g low fat sharp cheddar

1 egg

¼ tsp salt

¼ tsp pepper

½ tsp garlic powder

¼ cup pizza sauce

 

Instructions:

Preheat the oven to 425˚ and line your pizza pan with parchment paper.

Place the cauliflower in a microwave-safe bowl and cook for 8 minutes. Cool off in the fridge.

Mix 1 cup of the cheese, the egg, salt, pepper and garlic into the cauliflower. Shape into a “crust” on the pizza pan. It should end up about 10” in diameter.

Bake crust for about 10 minutes or until golden.

Add pizza sauce and pile on your favourite veggies! Peppers, onions, mushrooms, and tomatoes are all good choices. Maybe some fresh chopped basil and grilled chicken as well.

Return to the oven and cook for another 10 minutes. You will find that as the pizza cools the crust will become firmer and you will be able to eat it by the slice.  Of course that also depends on how many toppings you added…
